Indonesian Style Skewered Meatballs

1 lb. meatballs (The food team used already cooked frozen meatballs)
2 T. butter
½ cup chopped onion
1 t. coriander
½ t. ground ginger
1/8 t. cayenne pepper
1 T. brown sugar
1 T. soy sauce
2 T. peanut butter

Melt butter. Stir in onion, coriander, ginger, and cayenne. Cook, stirring often, until onion is tender. Stir in brown sugar, soy sauce, peanut butter and salt. Carefully brush the meatballs with the sauce. Bake for 4 minutes. Turn, brush with more sauce. Bake additional 4 minutes.



Potato Chip Cookies

This comes from the “Specialties of the Haus” cookbook sold by TCM.

1 ½ cups sugar
1 ½ cups brown sugar
1 ½ cups shortening
3 eggs
1 ½ t. vanilla
3 ¼ t. salt
2 ¼ t. baking soda
1 ½ cups crushed potato chips

Thoroughly cream the sugar, brown sugar, and shortening until fluffy. Add eggs and vanilla and beat well. In a separate bowl, stir together the flour, salt and baking soda. Gradually stir into creamed mixture until completely blended. Blend in potato chips. Chill dough 1 hour.

Shape into 1” balls. Place 3 inches apart on ungreased or parchment paper lined baking sheet. Don’t crowd, they spread! Bake at 375 degrees for 12 to 15 minutes.



Mandarin Orange Salad

A staple of many TPCC food functions… delicious!

1/2 cup sliced almonds
2 T sugar
2 T water
1 lb. bag prepared lettuce salad
1/4 cup chopped green onion
14 oz can mandarin oranges

Combine sugar and water; microwave 2-3 minutes until lightly toasted & glazed. NOTE: for ease of prep, we usually just toast the almonds in the oven at 350 degrees for 10-15 minutes and don't glaze them. You can also pour melted butter over them before toasting. Combine lettuce salad with green onions; refrigerate a few hours before serving. When ready to serve, pour dressing over salad and toss well. Sprinkle drained mandarin oranges and almonds over top. Serves about 10.

Dressing:

1/4 cup vegetable oil
1/4 cup juice drained from mandarin oranges
2 T sugar or 1 packet sweetener
2 T vinegar
dash of pepper and salt



Chicken & Dressing

Great for a small group or big crowd!

2 standard-sized cans cream of chicken soup
12 small chicken breasts (pref. 4 oz each)
1 stick margarine, melted
1 regular-sized bag of herb-seasoned stuffing (crush into crumbs if too chunky)

Spread soup into bottom of 9 x 13 pan. Dip chicken breasts into melted butter, roll in stuffing, tuck edges, and place on top of soup in pan. NOTE: You may think you can't fit all the chicken in the pan, but for it to make gravy, you have to "cram" them in tightly.

Bake, uncovered, at 350 for 30 min or more. Test chicken by slicing into the meatiest piece, and continue checking until chicken is cooked. Top will start to brown when it's done.



Cheesy Potatoes

A perennial favorite at TPCC.

1 30 oz bag frozen shredded hash browns, slightly thawed (you can set them out to thaw while mixing the other ingredients)
1 stick margarine, melted in large bowl (light margarine not recommended)
1 can cream of mushroom soup
1 16 oz carton sour cream (can use light)
1/2 cup chopped onion (recommend frozen, already chopped)
8 oz bag shredded cheddar (can use light)

Combine all except hash browns in bowl with melted margarine, sprinkle with pepper and salt. Mix well, then stir in hash browns, spread evenly into ungreased 9 x 13 pan, bake uncovered at 350 for 30 min or until edges start to brown slightly and sizzle. Serves 12-15.



Heath Bar Cake

Tasty and simple!

1 German chocolate cake mix, mixed according to box directions
1 can sweetened condensed milk
1 large container Cool Whip
3 coarsely crushed Heath bars (or a bag of Heath bar bits)

Prepare and bake cake as directed on box, cool 10 minutes. Poke holes, 1 inch apart all over top of cake (recommend using handle of a wooden spoon). Pour can of condensed milk over cake, spread evenly. Cool. Frost with Cool Whip. Sprinkle crushed Heath bars or bits over top of cake. Cover with foil; refrigerate overnight or for several hours.



Complete Your Meal…

To complete your meal, a Food Ministry "trade secret" is to use a variety of dinner rolls for TPCC functions. Our favorite is Rhodes frozen yeast rolls that you can get in the freezer case at Wal-mart. Thaw and bake as directed on package. Brush with melted butter or margarine as soon as they come out of the oven. Heavenly!
